Honey cake is a delicious meal, perhaps you have eaten it before but don’t know how to prepare it, today, I want to give you a quick explanation on how to make your own.


3 cups of  sifted all-purpose  flour, quarter  teaspoon salt, 1  teaspoon  baking  powder, 1 teaspoon baking soda, 2 teaspoon  ground  cinnamon,  1 teaspoon  ground  allspice, 4  eggs,  quarter,  cup  white  sugar, 4  teaspoons  vegetable  oil,   2  cups  honey,  half  cup  strong  brewed  coffee,  half cup  almond,  half  cup  raisins,  1  cup  honey, 2  tablespoons  lemon  juice,  half  cup  water,  half  teaspoons   lemon  zest,  2 ounces silvered  almond    for   topping.


Preheat  over  to325f, sift  together with flour,  salt,  baking  powder,   baking soda, cinnamon and allspice in a separate bowl,  beat the eggs, gradually adding  the  sugar. Beat  until  thick  and  light  in  color  about  5minuites, beat  in  the  oil, honey   and coffee,  stir  flour  mixture   into egg mixture,  chop the  almond  and  mix  with  raisins,  stir into  batter.   Oil   the  two   pans   and  line  the  bottom  with  waxed  paper,  oil  again,  fill  each  pan  with   batter  to  within1 or 1 quarter  inches   from  the   top ,  bake   for  5 – 7 minutes until   cake   test  done,   do  not   over  bake,   cool  for   10 minuites   and   remove   from  pan.

To   make   glaze,  boil  together   1  ½  cups  honey,  lemon  juice,  lemon  zest  and  water,  when  glaze  reaches  a  thick  consistency,   remove   from  heat and drizzle   over   cake  and   sprinkle   with  almond  silvers.
